Apicius - Cutting Edge Culinary Laboratory

At the leading edge of innovation, the recently opened Apicius Lab provides the perfect modern environment to engage in the highest levels of culinary arts training and practice.

Situated on campus at Le Bouveret, the recently completed facility, whose name refers to an ancient gastronome in ancient Rome credited with compiling the oldest collection of recipes, students have at their disposal five floors dedicated to culinary arts education.

With views onto Lake Geneva, Apicius was conceived and developed based on the experiences of our students.  Whether exploratory work creating new recipes or the latest developments in food styling where apprentice student chefs work on the visual appeal of their creations, the Apicius focus is on providing students with the most comprehensive educational and experiential training.

Modern installations such as fifteen state-of-the-art professional kitchens, classrooms equipped with the latest audio and video systems and tools to enhance interactive learning, each kitchen is dedicated to a specific stage of culinary development equipped with fourteen individual work stations.

Drawing inspiration from the great names in Swiss gastronomy such as Irma Dütsch, Anton Mosimann, Franck Giovanni, Pauli and others, students at Apicius learn from industry culinary leaders whose experiences and awareness of the latest industry trends prepare students for future success.

Apicius top floors, with its panoramic views, are home to Franck Giovanni's  'Food Inspirations' a space dedicated to fine dining and interactions between future chefs and guests, as well as the beautiful Möet Hennessy Space Lounge.

The Apicius Culinary Centre offers culinary education and experiences of the highest level in response to the ever increasing global demand for highly qualified specialists in the culinary arts. It has also hosted some of our Distinguished Chef Visits, where leaders in their fields offer masterclasses to our students.
